TEHRI or TAHIRI

Ingredients

Wash & rinse rice and soak it in enough water for 30 mins.

Wash & rinse vegetables & copped them in small equal size.
03.
If adding cauliflower then cut florets into equal size.

If using frozen matar (peas), boil it in hot water, drain & keep aside.

Slice 1 small onion & make paste of another onion with ginger & garlic in grinder or mortar pestle.

Heat 3 tbsp of ghee in heavy bottom pressure cooker.

Add all whole spices(i.e. cardamom, bay leaf, cinnamon, clove) & saute till they become fragrant.

Now add sliced onions & saute them for around 2 mins. they will start getting golden.

Now add onion ginger garlic paste and saute till the raw aroma goes away.

Add salt, turmeric, red chilli powder, garam masala, coriander powder. keep mixing these spices on low flame for 2-3 mins.Oil will start separating.

After that add all the vegetables one by one & mix them.

Now its time to add soaked rice & mix it properly with vegetables & spices.

Pour water only enough to dip the rice & add some ghee from above to enhance the taste.
14.
Put the lid of pressure cooker & cook it on high flame for 2 whistles.
15.
After 2 whistles turn off the flame & let it cool completely. Open the lid & mix it gently.
16.
Sprinkle above some coriander leaf and serve it hot with onion raita & dhaniya chatni.
